Healthy Hungarian Stuffed Peppers — Töltött Paprika (290 kcal, 26g Protein)
Töltött paprika — Hungarian stuffed peppers — are sweet pointed peppers filled with seasoned meat and rice, braised slowly in a rich tomato sauce. One of Hungary’s most beloved home-cooked dishes, and the kind of food that makes a whole apartment smell incredible on a Sunday afternoon. The traditional recipe is already quite well-balanced. My healthy changes: lean turkey mince instead of pork, a small amount of brown rice, and a light-handed tomato sauce. The result is 290 calories per serving — two generously filled peppers — with excellent protein.
Ingredients
For the Peppers
- 8 medium sweet pointed peppers (or bell peppers, tops removed and seeds cleared)
- 400g lean turkey mince
- 100g cooked brown rice
- 1 medium onion, finely grated
- 2 cloves garlic, minced
- 1 egg
- 1 tsp sweet paprika, 1 tsp dried marjoram
- Salt and black pepper
For the Tomato Sauce
- 1 can (400g) chopped tomatoes
- 200ml low-sodium broth
- 1 tbsp tomato paste
- 1 small onion diced, 1 tsp paprika, 1 tsp olive oil
- Salt, pepper, 1 grated carrot (balances acidity naturally)
Instructions
- Cut tops off peppers (keep as lids). Remove seeds and membranes without breaking walls.
- Combine all filling ingredients. Mix well. Fry a test piece to check seasoning.
- Pack filling tightly into each pepper. Replace lids.
- Make sauce: sauté onion in oil 5 min. Add paprika, tomato paste, tomatoes, broth, carrot. Season.
- Stand peppers upright in sauce (snug pot helps them support each other). Sauce should come halfway up.
- Gentle simmer, covered, 50–60 minutes on LOW heat until filling reaches 75°C / 165°F.
- Serve with low-fat sour cream, fresh parsley, and buckwheat or cauliflower mash.

Frequently Asked Questions
Q: Can I use beef mince instead of turkey? A: Yes — extra-lean beef mince (5% fat) is closer to the traditional Hungarian version and adds approximately 40 kcal per serving. A 50/50 turkey-beef mix gives the best balance of authentic flavour and lean nutrition. Q: How do I stop stuffed peppers falling over? A: Use a pot where peppers fit snugly so they support each other. Or crumple baking parchment between peppers. Or simply lay them on their sides — horizontal cooking produces the same result. Q: Can I freeze stuffed peppers? A: Excellently — freeze with the sauce for up to 3 months. Defrost overnight in the fridge. Reheat covered in the oven at 180°C for 25 minutes or on the stovetop over low heat.
